JULIENNE VEGETABLE SOUP

​The julienne is a French word which is use in the kitchen to describes the way to cut the vegetables, in long thin square shapes.

This traditional French and Spanish soup looks beautiful, it has a light fresh flavour and is very healthy.
Is very fast and simple to make it so there is no excuse to eat healthy for one day!


 
INGREDIENTS for 4:
​
  • 1L water and vegetable stock.
  • 150gr Cabbage.
  • 125gr Carrot.
  • 125gr Turnip.
  • 150gr Leek.
  • 100gr Celery.
  • 50gr Butter.
  • Salt.
 
METHOD:

  • Chop all the vegetables in julienne (long thin square shape).
  • In a pan add the butter and melt it.
  • Add the vegetables and fry them few minutes.
  • Add the stock, the water and season it with salt.
  • Cook it for 10 minutes.

MEAT PIE

​Meat pie, empanada de carne, this pie is so nice, we have a lot of varieties in Spain, the dough are different depending on the area, in the stuff there is also a lot of varieties like adding carrots in the meat, tuna with pisto, fish, etc this is a basic and easy recipe which I like to make so I hope you enjoy it and try it at home!

INGREDIENTS for 6:

  STUFFING
  • 500gr Mincemeat.
  • 2 Cloves of garlic.
  • 1 Onion.
  • 2 Peppers (green and red).
  • 3 Eggs.
  • 500 gr Tomato sauce.
  • Salt, pepper.
 
  DOUGH
  • 100ml Milk.
  • 100ml Sunflower oil.
  • 2 Eggs.
  • 400gr Soft flour.
  • 8gr Salt.
 
 
METHOD:

  STUFFING
  • Cook the eggs in boiled water for 10 minutes.
  • Chop the garlic, the onion and the peppers into small pieces.
  • Chop the boiled egg.
  • In a pan with olive oil add the garlic, the onion and the pepper and cook it for few minutes.
  • Add the mincemeat and cook it for few minutes more and add the salt and pepper.
  • Add the tomato sauce and cook it for few minutes.
  • Add the boiled egg and cool down.

  DOUGH
  • Put all the ingredients in a bowl and mix them.
  • Knead it until you have a nice dough and leave it to rest 15 minutes.
  • Preheat the oven at 190°C.
  • Extend half dough to make the base and put in in a tray.
  • Add the stuffing
  • Put the other half of the dough extended, cover and close it.
  • With a brush put some whisked egg.
  • Cook it in the oven for 45-50 min.

ROAST CHICKEN

This recipe is very simple and really tasty, it doesn’t take long time to make it and you can do another task at the same time because the oven makes all the job! So, let’s make a healthy, tasty and easy food!

INGREDIENTS for 2:
​
  • 300gr Chicken
  • 1 Onion
  • 1 Pepper
  • 2 cloves of Garlic
  • 100ml White wine (optional)
  • Salt, pepper, thyme or rosemary
  • Bay leave, smoked paprika, parsley

 
METHOD:
​
  • Preheat the oven at 180°C
  • Slice the garlic, the pepper and the onion.
  • In a tray, add the chicken, the vegetables, the wine, all the spices and a bit of water.
  • Cook it in the oven for about 20-30 minutes, add more water if you need to.

CHICKEN SOUP

With the carcasses of the chicken you can make a delicious stock to make a lovely chicken soup.
I love chicken soup even more in winter! when I arrive from work in a cold day, a warm and tasty food it just makes my day!

 

INGREDIENTS:

  • Chicken carcasses
  • 1 Onion
  • 1 Celery
  • 1 leek
  • 2 Carrots
  • Salt, pepper, bay leave, thyme and parsley.

METHOD:

  • Chop the vegetables in pieces, they don’t need to be very small.
  • In a pan, add the carcasses, the vegetables and the seasonings (Salt, pepper, bay leave, thyme and parsley).
  • Cover it with water.
  • Heat the stock in the maximum and when is boiling cook it in the slow heating for at least 1-2 hours, you can leave it up to 4-5 hours.
  • Add more water if you need it.
  • Then, strain the stock with the colander or strainer.
  • Add in the stock the meat is left in the carcasses and the vegetables.
  • Add your favourite noodles and cook them.

LENTILS WITH CHORIZO

A very typical stew of lentils with chorizo. there is a lot of ways to make them, this is one very easy, some people add tomato sauce, garlic, even boiled egg, depends of you!


INGREDIENTS 4Pax:

  • 350 gr Lentils
  • 150gr Chorizo
  • 1 Carrot
  • 1 Potato
  • 1 Tomato
  • 1 Onion
  • Smocked paprika, a bay leaves, salt and pepper.

 
METHOD:

  • Soak the lentils in a bowl about 4-8 h or the night before unless they are Pardina lentils.
  • Chop the onion, peel and chop in irregular pieces the potato and slice the carrot. 
  • Peel the tomato, take the seeds out and chop it.
  • Slice the chorizo
  • In a fry pan add the onion, the carrot and the tomato and fry it for few minutes. Then, add the potato and the  chorizo and cook it for few minutes more.Season it everything with salt, pepper, smoked paprika and a bay leave to your taste.
  • Wash the lentils and cover them with cold water in a deep pan.
  • When the water start to boil add the sofrito and cook the lentils for about 15-20 minutes or until they are cooked, depends of the types of lentils you will need more or less time.
  • Note: you can do the sofrito in the same pan or separate.
  • Enjoy!
