CAMPERA SALAD

This refreshing salad is a typical dish we enjoy in Spain when the warm weather arrives. There are many variations — some people add tuna, in Murcia they often use extra tomatoes, sometimes even cooked carrots. Just use what you love and create your own twist!



INGREDIENTS for 4:

• 150 g boiled potatoes
• 75 g pitted olives
• 25 g onion
• 2 boiled eggs
• 1 green pepper
• 3 tomatoes
• 1 carrot (optional)
• Olive oil
• Salt, pepper, and vinegar

METHOD:

• Cook the potatoes, peel and dice them.
• Slice the green pepper, carrot (if using), and onion. Chop the tomatoes and the boiled eggs into chunks.
• Combine all the ingredients in a bowl.
• Season with salt and pepper.
• Dress with olive oil and vinegar to taste. Mix well and serve fresh.
