This starter is perfect for the summer! “Ensaladilla rusa” or “ensalada Oliver” is a traditional salad in Russian cuisine and also in many European countries, in Mongolia, Israel, Iran even through Latin America, there are so many different versions but is usually made with diced boiled potatoes, carrots, brined dill pickles, eggs, celeriac, onions, green peas, diced boiled chicken (sometimes ham or bologna sausage), tart apples, with salt, pepper, and mustard, dressed with mayonnaise. In many countries, the dish is commonly referred to as Russian salad A variation called Stolichny salad is also popular in the Russian cuisine. The original version of the salad was invented in the 1860s by Lucien Olivier a chef of one of Moscow's most celebrated restaurants. Olivier's salad quickly became very popular. The exact original recipe was kept in secret but it is known that the salad contained grouse, veal tongue, caviar, crayfish tails, lettuce capers, and smoked duck. The original Olivier dressing was a type of mayonnaise, made with French wine vinegar, mustard, and Provencal olive oil. At home I used to eat a lot in summer, to be honest I didn’t like too much when I was a child because I don’t like peas, but I love seafood sticks so I used to take out the peas, it took me ages to eat it but it worth it, is very fresh and delicious!
