CHOCOLATE COCONUT BISCUITS!

​I love coconut biscuits, they are so simple to make and so delicious! I used to make them when I was a kid with my siblings and we had a such great time making them together and some times we could´t wait to eat them after cool them down. We still make them and we send pictures to each other. When one of us make them and send the picture we all end up to make them as well and we talk about how delicious are!.

INGREDIENTS:
  • Plain biscuits.
  • Chocolate and hazelnut spread.
  • Milk.
  • Ground coconut.
 
METHOD:
  • Fill the biscuits with the chocolate and hazelnut spread.
  • Soak the biscuits in the milk. Don’t  put too many biscuits at the same time in the milk because they will broke down.
  • When they get soft, pass them through the ground coconut and put them in a plate.
  • Keep the biscuits few hours in the fridge to cool them out.
  • Enjoy this super delicious biscuits!. :)

POLVORONES

A polvorón is a type of Spanish shortbread, it is heavy soft and crumbly. It is call also mantecados. These sweets are traditional in Spain, Latin America and the Philippines. Polvorones are popular Christmas delicacies in all of Spain. There are a lot of flavours and varieties but the main one is with almonds.
Polvorones were brought to Spain by the Arabs and there is a possible Levantine origin as there is a similar sweet known as ghurayba.

 

INGREDIENTS:

  • 300gr Flour.
  • 300gr Lard.
  • 300gr Sugar.
  • 100gr Ground almond.
  • 75gr Chopped almond.
  • 1 Egg.
  • A pinch of salt.
  • Cinnamon to your taste.
  •  Icing Sugar.


METHOD:

  • Toast the Flour, the ground almond and the chopped almond separate. You can do it either in a pan or in the oven. In a pan toast on medium-heat until it gets toast (the flour will get darker but not too much, and the almonds will get slightly more yellow or golden. To toast it in the oven spread it in a tray with  baking parchment paper at 200 degrees.

  • When the Flour, the ground almond and the chopped almond gets cold,sieve the Flour and put everything in a bowl. Then, add the salt, the cinnamon and the sugar.

  • Make a hole in the middle of the mix and put inside the egg and the lard.

  • Knead  energetically and carefully with the hands from inside the hole to outside in circular movements until you get a soft and uniform dough.

  • Cool down the dough for 30 minutes if it is a bit sticky and warm.

  • Preheat the oven at 180 degrees.

  •  Roll out the dough to 1.5cm or more if you wish.

  • Cut and shape the dough with the classic round mold or  with your favourites molds.

  • Cook the polvorones for 10-12 minutes or more if it is needed.

  • Sprinkle the Polvorones with icing sugar.

  • Enjoy this super delicious cookies!!

TORRIJAS

Torrijas is a tradicional  dessert we make in Spain in Easter, you did´t try them yet?

 
INGREDIENTS:

  • Bread ( a bit hard).
  • 1L Milk.
  • 5-6 Spoons of sugar.
  • 4 Eggs.
  • An stick of Cinnamon and ground cinnamon.
 

METHOD:

  •  Slice the bread.
  • In a pan add the milk and the stick of cinnamon and warm it up until it comes to boil.
  • Soak the bread into the warm milk.
  • In a frying pan add a good amount of olive oil and warm it up.
  • Whisk the eggs. Soak the bread into the whisked eggs and fry the bread.
  • Leave the bread on some kitchen towel so we take out the leftover oil.
  • In a plate mix ground cinnamon with sugar to your taste.
  • Soak the slices of bread in the mix of sugar and cinnamon.
  • You can eat the torrijas warm or cold!.

  • Enjoy and don´t eat all of them at once!.

BLUEBERRY CHEESCACKE !

This is one of my favourites desserts! it is so easy to make and the results are incredible.
I usually make the cake for my friend´s birthdays and they love it!.

 

INGREDIENTS:

  • 500gr Soft cheese.
  • 500gr Single cream.
  • 250ml Milk.
  • 150gr Sugar.
  • 4 leaf of gelatine.
  • Blueberry jam.
  • Bake base.

 
METHOD:


  • In a pan add the cream, the milk, the sugar and the soft cheese in the medium heating, stirring frequently with a whisk.
  • Put the bake base in the cake mould.
  • In another pan add the same amount of sugar and water to make a syrup for the bake base. When it comes to boil turn it off and with a brush we soak the bake base.
  • We hydrate the sheets of gelatine in cold water.
  • When the mix of cream, milk, sugar and soft cheese comes to boil turn the heating off and add the gelatine leaf. With the whisk mix everything properly.
  • Pour the mix carefully into the cake mould.
  • When the cake gets cold keep it into the fridge over the night.
  • The next day add the jam on the top.

  • If you wish, decorate the cake and let your imagination run wild!

FRIED MILK !!

​This is a very typical dessert from the north of Spain, you will be surprise of how tasty is it and the texture is awesome!!
So enjoy this recipe and try it! Is very simple to make it !!


Don't forget to cook it with love! ;)


INGREDIENTS:
​
  • 1L Milk
  • 100gr Sugar
  • 80gr Corn flour
  • The skin of a lemon
  • Stick of cinnamon
  • Ground cinnamon
  • Flour
  • 1-2 Eggs
  • Olive oil

METHOD:

  • In a pan add 800ml of milk the stick of cinnamon and the skin of the lemon and heat it.
  • In a bowl add the corn flour with the 200ml of milk that you have left and mix it with the whisk. Then add the sugar and mix it again.
  • When the milk it comes to boil, pour the milk to the bowl with the mix using a strainer colander.
  • Mix it properly with the whisk and put again in the pan in the medium heating.
  • When it comes to boil, cook it for few minutes and you will get a soft texture.
  • It is very important you keep moving it all the time with the whisk!!
  • Pour the mix in a deep tray and cool it down for few hours.
  • When the mix is cold, take out from the tray and cut it in squares.
  • Heat the oil in a large non-stick frying pan over medium-high heat.
  • Dip each piece in the egg on both sides, the put the piece on the plate with flour on both sides.
  • Put the piece coated with egg and flour on the frying pan and fry them for few minutes until they get brown-gold colour.
  • In a plate mix ground sugar and ground cinnamon to your taste and dip the fried milk through it

RICE PUDDING

This is a typical dish from many countries and is one of my favourites, I love cinnamon!
I remember when my mum made us this when we were kids, just the smell made me hungry and I always went to the kitchen waiting for the rice get cold so eat it, it seemed to take ages for me! It so delicious.
There are so many varieties of this dessert that depending on where you are in Spain, it is always going to be different but as you can imagine, my mother's is my absolute favourite.



INGREDIENTS for 4:

  • 1L Milk
  • 150gr round-ground rice
  • 200gr Sugar
  • 1 Table spoon of butter
  • The skin of a lemon
  • Stick of cinnamon
  • Ground cinnamon

 
METHOD:

  • Cook the rice with water for 5 minutes.
  • Strain and wash the rice with cold water.
  • Heat the milk with the stick of cinnamon and the skin of lemon.
  • When the milk is nearly boiling take out the stick and the skin of lemon out.
  • Add the rice in the milk and cook it for 15 min.
  • Add the butter and the sugar and cook few minutes more.
  • Put the mix in bowls, add ground cinnamon and cool down.

CHOCOLATE AND CINNAMON CAKE

A super easy and tasty chocolate and cinnamon cake!!!
Is suitable for lactose intolerance!!
In Spain my mum used to bake on winter cakes on Sunday with hot chocolate, very typical!

INGREDIENTS:

  • 3 Eggs
  • 300 gr Sugar
  • 150 ml Water
  • 150 ml Sunflower oil
  • 300gr Plain white flour
  • 20gr Cocoa
  • Ground cinnamon to your taste
  • 12gr Baking powder

METHOD:

  • Preheat oven to 180C
  • Mix the sugar and the egg in a bowl
  • Pour slowly the water and the oil while you keep moving the mix with the whisk.
  • Sift the flour and the cocoa with the strainer and add them to the mix with the baking powder in two or the times.
  • Mix all with the whisk
  • Pour the mix in a bake dish with parchment paper
  • Cook it for about 40-45 min.
